In reality, my guess is that's from a vegetarian restaurant. They regularly use quotation marks around faux dairy/meat products. Hence "meatloaf" and "mac & cheese."
Nope. I don't think there are three different vegan cheeses, and they're all nasty if there are. I do like the idea of metaloaf, though. Something served at a yoga retreat, methinks.
