I'm a little surprised that actual experience is required rather than just "experience". So you have to have real experience, but may or may not be a sushi chef?
At least it didn't say "SUSHI" CHEF, though that's what I would expect from a sushi place 1,500 miles from the nearest ocean.
I assume that being a fisherman dealing with bait would qualify for this postition.
Since there is not much cooking involved, I would have expected sushi "chef". - JohnnyB
Maybe this is correct since a chef is someone who COOKS and sushi is, by definition, NOT cooked. : )
Kind of reminds me how people who work at subway are called "Sandwich artists"
